Learjet--
I own both a stereo optical scope and a digital scope. At my QX5's lowest magnification (10x), I can only capture a fraction of any coin. I would suspect that's generally true for any digital microscope, but check around. As an update, I just read the Dino-lite scope will do full shots of coins.
To photograph coins, I use my Nikon D70s with the 60mm macro lens. I like the results, although the sensor/lens picks up every detail--which often accentuates wear. I hear there are other cameras out there that do a reasonably good job without the expense of my setup.
