I would suggest a copy of A Guide Book of United States Paper Money, Fifth Edition. It is authored by Arthur and Ira Friedberg (noted experts in the field) and is published by Whitman. It should give you a good sense of the history of US currency (Federal issues); it is also a fairly comprehensive catalog so reviewing it will let you know what is out there, what notes are scarcest and give you a rough sense of pricing for each note across grades. (Note: the prices listed should only be used as a guide, they may or may not reflect current market pricing for a given note.)
The volume does not cover American colonial paper money or obsolete currency, but it does provide good coverage of US large and small size currency.
I wish you the best with your efforts to learn - such activity is always time well spent.
