Consider ancient Greek city-states, each one of which can be considered a "separate country". There were thousands of them, scattered across the Mediterranean region and beyond, and many of them issued coins.
This Wildwinds index page is by no means comprehensive and lists over a thousand of the more commonly encountered city-states, kingdoms, tribes and empires in the ancient world.

Are the Micronations real currency or just produced for display?
"Micronations" are defined as entities which claim to be independent countries, but which have no international recognition as such, nor do they effectively control the territory they claim. This is distinct from an "unrecognized state", which also has no international recognition of their independence, but which does in fact exercise some degree of control over their claimed territory. Both micronations and unrecognized states issue coinage for sale to collectors and tourists; only unrecognized states issue coinage for circulation.
Examples: Sealand and Hutt River are micronations. Transnistria and Somaliland are unrecognized states.
