Nice examples!

After looking at photos of grouses online, I am inclined to say dove?

Star of David counter stamped LMC in Littleton Stamp and Coin Co. envelope...
I could have done a better Star of David than that!

Yes its possible coinfrog, but these in my opinion are the best ones as they are 'official' releases from a company with the original documents or envelopes etc. So many these days we are seeing are just metal stamps people bought that were mass produced and hammered it into the coin which are fun. Much more rarely someone takes time to custom make one and of course there you could do quite a lot since these are popular.

I've researched through all my resources to track it down when it hit me.... duck (or dove)...

The options on Adam J. Cool's list of engraved dies he made for birds was: Grouse, Quail, Woodcock, Duck (small), Duck (large), Eagle, Pheasant, Turkey, Goose (small), Goose (large), Dove, Two ducks, and Penguin.

I'm torn between grouse or dove on this one. I'm going grouse. What do y'all think?

Stalked, watched, listened to (drumming noise - cool to hear), hunted and eaten a few grouse in my day. My first thought was a grouse.

I think my eye is taking the striations above the eye and going towards the back as the typical Ruffed Grouse markings rather than the non-striped head of a dove?

Rifle:
Looks to be the famous Winchester Model 94 .30-30 Also available in .32 Special which is what I downed my first deer with in '77.

This is an example of the Philatelic Numismatic Combination (PNC) cover that held the Adam Cool Mickey Mouse pressed cent from 1978. This cent was pressed not rolled between rollers. It mentions only 18 were produced so thats why I'm posting it.

Well, I did more research on dove and grouse images. Since grouse spend a lot of time on the ground there aren't many pictures of them flying. Here are two that I found...

Grouse...

Dove...

I have to agree that it's a dove too given the limited choices to choose from.

Definitely not a woodcock...

Edited to add image of pressed vent for comparison and to add the woodcock image to rule it out.

@datadragon.

Thanks for posting the Mickey Mouse pressed cent. I looked at my list of ones that he produced and number 69-Mickey Mouse was there.
