Those are great photos and I will be interested to hear what others think. Can you include some information about what you changed between the 3 photos? Different lighting, or different camera settings, or some combination?

Capturing toning requires lights be at a very high angle and diffused, and to use relatively small lens aperture. Capturing luster requires a specific range of angles (both vs coin and vs each other)and minimal diffusion. I developed the "smile directors" specifically to overlap between these requirements. I don't know of a technique that can give BOTH great toning (axial is best) AND great luster (single small light is best) so you need to find a compromise between the techniques. The PCGS system does a good job, and seems to blend axial or pseudo-axial with small lights to give a mix of the two techniques.

The lens mounted diffuser seems to be doing a good job. Which images should we compare for before/after?

Those look really good to me! I find that the lens-mounted diffuser is the best overall method for lighting coins. You can control amount of diffusion very easily, and depending on design of the diffuser, light can be almost axial if desired, or you can force the light to come from outside the "glare circle" on slabs.
