Actually to be technical it's a bison and it's a bull if male, and a cow if female.

Note the shape of the affected area. It has been flattened from coin damage. If it were a chip, it would be raised. If it were a doubled die, it also would be raised, not flattened. 99% of incuse marks on coins are coin damage.
