Just found what appears to be a extra I in the liberty of the penny I have just looked at. I'm aware that it is has occurred in other years of pennies, but I've never seen a 1917 with it. any thoughts on what this could be, value? Much appreciated!

Hard to say that is a die chip (BIE) as there is some gunk or maybe damage around several letters. Maybe an acetone bath would help?
