when it comes to identifying between Strikes of Eagle Coins Which is witch?

Obviously a Proof is a proof strike (same goes for the Reverse proof) So lets ignore them for now.

I'm talking about the Uncirculated/bullion/burnished coins

Lets look at how the US Mint labels them.

look at the COA of the 2011 Eagle Set:

it has the:
W Uncirculated
W Proof (to be ignored in this discussion I hope)
P Reverse Proof (This one too)

No MM Bullion
S Uncirculated

Are all the Non- proof coins considered Burnished Coins? Or are they labeled as the Mint did on the COA?

My question arises due to the fact the I will be collecting the 'Burnished' Eagles at some point

There's bullion (no mm), uncirculated (with mm), and proof (with mm).
Burnished and uncirculated are the same coins.

The mint only sells the uncirculated and proof directly to customers. Bullion has to bought from authorized dealers.

ehhh... you might want to have a look at APMEX (as just one example) to see what they're selling for. I just looked. you can get a random date bullion ASE for $38.... or you could spend as much as $59, depending on the date, so those prices are $10 - $30 over spot.

edit: additionally, the only burnished coin they have listed (with box & COA) is the 2011-W for $59.99. they have some slabbed, not many choices tho.

I'm sure some of the other usual, big-name dealers have at least a few different makes, dates & mints. I just used APMEX as one example.

yeah, I did the same, I assembled a burnished set once i'd acquired those same coins in those same sets. I acquired a blank ASE dansco album for the burnished ASEs.
