I only have notes from 2 countries, I can tell you each serial number, value, when I purchased each note and what I paid for it. But I have only 211 notes.

Nice one. You have a good memory.
Most of my notes are from Ireland, I do know what they cost me, but I don't know all the serial numbers!

I don't "know" it, but I have an app for that. My coin collection database includes my non-coin numismatic items, such as banknotes. It's relatively easy to run a sort on "material" (i.e. what the object is made of).

If I do a database search for items that are made of either "paper" or "polymer", that will pick up pretty much all of my banknotes, and very few other items. Filtering out those other items (which includes souvenir funny money, cheques etc) is also easy, giving us a total of 1039 banknotes in the collection, out of a total of 14211 items.

I have been doing a rough tot up - I have approximately 3000 notes, of which slightly over 2000 are Irish.
I will count them someday.

I don't know; never counted them.
For Notes: perhaps in the range of 200 to 300

For coins: perhaps in the range of 2,000 to 3,000

Same for estimated value of the collections - moving goalposts.

I'm having all of them administered in BanknoteMate. Many of them scanned by hand, many more auto-imported from the internet. BM tells me I have 2860 notes in my collection atm.

I'm going to count mine! It would be an excuse to visit them, and an interesting academic exercise.
Most of my collection came from banks, or other collectors.

I own around 3.000 pieces of German Notgeld. But my main collecting habit is that of world banknotes
