This is all supposition on my part, but it appears to me that certain dates and mintmarks of Morgan dollars have a preponderance of toned examples. To a large degree it appears to occur amongst mid-1880's CC, S, and O mint dollars. Has there been speculation as to why this might be? The only thing I can think of is that perhaps the mint bags that were supplied to these respective mints at this period of time contained higher amounts of sulfur, or other substances known to cause toning. Or I'm completely wrong. Feel free to correct me. I have a fairly thick skin.

Your spot on for the rainbow toned Morgan's coming from the mint bags with high sulfur content. A lot of the toned examples were dipped by dealers in the 60's and 70' as collectors wanted bright white mint like coins. Today the toning is growing on Morgan's because the collectors are paying a premium for nice rainbow Morgan's, and the coin doctors are filling the demand with creative ways to duplicate bag toning.

I remember the first time I saw a colorful rainbow toned Franklin half dollar in the late 60's that I pulled from an end of paper roll as it had the WOW factor. The people buying the Morgan bags must have seen a lot of the rainbow toned Morgan's with the WOW factor.

Other Morgans quite famous for their toning are the Redfield Hoard coins and the Tidy House coins.

Morgans also had some lovely end roll toners as @Slider23 noted.

As a Morgan dollar collector I have seen many Redfield hoard coin for sale packaged in the similar holder they all seem to be in.Personably, I think they look horrible with that blackened carbon thick crud that is formed around many of the edges of them.Yes,a rainbow tint looks good on many Morgan's but I like mine bright with clean fields myself.
Another look I really like is a uncleaned mid grade circulated dollar with no tiny rub scratch marks and all natural. Its so cool when they haven't been messed with dipped, polished or rubbed.I think you might no the look I'm trying to express.
P.S.Just look at some of the Morgan's for sale on ebay.Gezzz ohhhWezzzzz!
