Would over-polishing the dies make the letters thinner? It seems like it would have the opposite effect, unless they used an angle grinder and really took them down several notches.

The devices are tapered - thinner the deeper into the die . this helps to release the coin after a strike. when a die is polished the surface (the fields) get lower and because of this, the devices get smaller (thinner).

Hongo, more you polish more thinner will be because the Die it is negative concave lettering.
