I bought this coin because I thought it was interesting and was wondering if anyone knew what the history behind this particular coin is? About all I can find is that it is a demonetized collectors coin/token. Is this correct? Mintage numbers?

It's not "demonetized" since it was never monetized to begin with - it's a privately-issued "fantasy pattern" which never had legal tender status.

Prior to the introduction of the Euro, many private companies issued similar 'pattern Euros' - you can even get them for countries that never joined the Euro, like Sweden, Denmark and the UK.
