I'm finally getting to the point where I can take good coin photos.

The problem is I'm not sure how to change the giant file size jpegs from my camera to an acceptable size for posting.

Can I use photobucket to do this? Are there other good photo-editing sites?

yes you can use photobucket if you wish. I think google has a app thats free (can't think of the name of it right now) that will re-size them if you wish also. I usually crop the picture to show only the coin, then I will re-size it to fit on the forum. Just cropping all the other areas out will knock out a large amount of the size if you are showing more than just the coin in the pictures. You can use photoshop or even paint to re-size

I like Photoscape as you can it to any size, along with being able to crop roundly, among other great features.

Picasa is the Google app. Irfranview is another free photo editing software.

I like Gimp but some would say the learning curve is a bit steep. But for simple crop, resize and sharpen, its pretty easy.

I use a freeware program called PixResizer from Blue Five Software. Free download at http://bluefive.pair.com/ It is very easy to use.
