Red, red-brown and brown are terms used to describe the coloring of uncirculated (typically) copper coins. I have seen the following definitions: Red coins have almost all of their original red color; a red-brown coin is starting to tone but still has significant red color showing while a brown coin has fully toned to the brown color we are all familiar with.
I have had pretty good experiences on ebay but I wouldn't buy high-value coins unless they are certified or from a trusted source. No raw 1909-S VDB's or 14-D's for me.
If you follow the grading forums you can see pictures and assigned grades for many different coins.
For crud, many people soak in acetone to remove organic materials. There's also some products to remove verdigris (Verdi-Gone). You can do some searches to find threads on them.
