I was wondering if a coin that was accidently struck twice if that would go for more than one witha normal strike. I have a counterstamped Saggitarius coin that was struck twice like a double die. This is probably a stupid question but was just wondering.

Do you mean one that was counterstamped twice? No...since this is a private thing (not controlled as with the Mint), counterstamps are just what they are. No numismatic value, and the rules regarding errors and the like do not apply at all.

Furthermore, the difference between a double strike counterstamp and a doubled die are about as different as elephants and chickens.
