My grandfather has given me two 1960D large date rolls that he has had in his desk drawer, probably sitting there since 1960.

1960-D-Penny-Rolls

I am excited about looking through these (as I would be any coins) but am wondering if there is anything to look for besides maybe a small date or DD? If I don't find any errors, is there any reason not to throw these in my copper pile?

Denver Large/Small dates are no big thing, unlike Philly - production between the two in Denver was about even and the Smalls are therefore not uncommon. I have an original roll of BU Small Dates; you can trust me on this 'cause I did the adrenaline thing at first myself.

Yea, look for high grade gems!

Why would you toss mint state, BU coins into a junk copper pile?

Lots and lots of repunched mintmarks(RPMs) on 1960Ds.

Thanks for the replies! I didn't see anything looking through the first time, but I am still "developing my eye." I've casually collected since I was a kid (just pulling stuff out of circulation), but my interest is starting to take off a bit (hoping it's a hobby that my daughter will be excited about sharing with me).

I virtually guarantee that you have at least a few repunched mintmarks in those rolls as there are so many of them for that date. This could be a great chance to train yourself on what to look for. Be sure you use good lighting and magnification and you could be pleasantly surprised, especially since these are all BU examples. Coppercoins.com is a great resource for helping identify them. Like some above members said, look for RPM's, 1960-D's are known for several RPM varieties!!
