Is there an easy way to tell the difference between an 1864 CN Indian Head cent and an 1864 bronze Indian Head cent?

The CuNi's are a lot thicker and quite easy to determine if you have both types
in hand. The color is also considerably lighter on the CuNi coins.

the coins thickness is the easiest way to tell the difference. a bronze 1864 will be about the same thickness as a modern cent. a copper nickel one will be almost twice as thick.
