LOL, it has nothing to do with the bubbly adult beverage. It is just a fancy description for light golden beige toning, similar to the color of champagne(or sparkling wine outside of the namesake French region).

Your title caught my eye as well. I think it is a light rose or pink tint. I have a few coins toned like this naturally but it isn't the most common color. I would say gold and blue are more common.
Oh, I edit and could be wrong. I did not see Bio's color comment.
About 30 years ago, they discovered a mountainside full of discolored crap diamonds in various grades of brown. They've been promoting them ever since as sham-pain diamonds.
