I have a question, and I apologize if it has been asked prior.

I am thinking of custom-making some storage solutions for my safe. Does anyone know what type(s) of wood would be good for such a thing and not tone or otherwise affect the coins?

I know anything fragrant like cedar pine or spruce would likely be bad...and redwood is wasteful and expensive... so my top picks immediately are poplar and basswood, both of which seem fairly inert and strong.

Also if I did any finish it would be a food-grade mineral oil rub. Anyone see any issues with that?

thanks in advance.

I'm not sure about those types of wood you mention - or the oil - but my cabinets are made of mahogany - as are most good coin cabinets I believe - because it is a relatively inert wood and desn't cause problems.

It must be a huge safe...

I'd consider metal shelving just to play SAFE.
There are numerous types of woods available and also plastics, but again, why take chances. Use metal.

What got me started is I found some drawer inserts which normally you'd use for maybe silverware or whatever. And these were the perfect width for slabbed coins and they had slots for inserts which were perfect for fitting 2x2's in the other direction. I "thought" they'd be perfect for my safe. On the outside dimensions they are, but taking the thickness of the walls into it, no.

So now I'm thinking of making my own...I liked the wood because it wouldn't scrape against the metal shelves already in the safe and because I have essentially zero metal fabrication experience. I'll look into mahogany, thanks... or maybe I'll cut a section out of the ones I have and make them shorter, or maybe... just maybe... I'll stop trying to solve a problem that doesn't exist.

Nah!

Remember that all finished woods usually have been treated with something. Regardless of the type of wood you decide on, there is the possibility of some treated solutions used leaking gasses over time. Many types are treated for bugs, moisture, looks, etc. and if you don't know what was used, best not take chances.
Anther consideration is in case of a fire, remember that although your safe may be a bit on the fire proof side, the safe still gets hot. Anything on the inside will be effected. Any plastic will melt. Treated woods will expell gasses and/or even start to smolder.
Keeping all metal shelving would always be the safest bet.
And if you don't know how to make a shelf out of metal, check out companies in your area that may work with sheet metal such as siding companies.
