Found this coin in my late father-in-laws collection. I really don't know much about anything but have been doing a lot of reading. It has a partial double profile from the nose to the chin. Is this anything special? Please see pics.

It looks to me like you are seeing the effects of cleaning. The doubling appears to be from the toning on the coin being cleaned and not actual die doubling. See what others say.

I agree on the toning line, not doubled. The other note is the reverse shows Slanted Arrow Feathers (SAF) as opposed to the reverse of 1878 which has parallel arrow feathers (PAF). 1879-S with PAF Rev of 78 is worth considerably more than a generic 1879-S is worth, especially in really high grades.

PCGS Pricing as of today,

1879-S Reverse of 1878 MS65 $7,500.00+ MS63 $500.00 MS62 $295.00 AU $60.00

1879-S Reverse of 1879 MS65 $190.00+ MS63 $72.00 MS62 $51.00 AU $32.00

So keep an eye out for those 1878-S PAF in AU and higher grades!
