Over the years the Polish eagle (symbol of Poland) [Crest of Poland]

Has changed.

If there is someone who collects Polish coins, can you tell me if there has been a coin issued showing the different Eagles of Poland?

The date of the coin is 1970, and the eagle above that is the one from the Polish coat of arms, with a smaller Piast dynasty eagle in the middle.

The other side shows a border marker with an eagle on top and PRL, the abbreviation of the country name at that time. On the right, you see the CoAs of seven cities. These are the "capitals" of the voivodeships established in the territories that were German until 1945 and became Polish after WW2.

But I don't think the Polish eagle on 20/21c coins has changed much. The primary difference is that, between 1949 and 1989 it had no crown. Before and after you see a crowned eagle on the coins.

Are you after one coin showing the changing eagle, or a series of coins down through the ages demonstrating it?

I don't think you'll find them all on one coin of modern Poland. Poland isn't entirely proud of all aspects of it's history, particularly the parts where they were conquered by their more powerful neighbours to the east, west and south, and puppet regimes established.

The coats of arms displayed on the small shield on this coin are actually those of the old German provinces and principalities established in the area. I can recognise the arms of Danzig, second from top. According to Krause, this coin commemorates the "25th anniversary - Provincial Annexations" - presumably referring to the bits of eastern Germany formally handed over to Polish control by the Soviets.

On these pages some older Polish eagles are depicted:

Again, I don't see that many differences. Keep in mind that, until the mid-1970s, the eagle on the coins (particularly commemorative pieces) was often "interpreted" by the designers, so you end up with many different looking eagles. Since that time, however, Poland has basically used the "official" eagle on the country's coins.
