I was wondering if you folks use snaptites, 2/2's, or something else? I would love to have them either in my binder for display, or in something where they are compactly stored, and safe.
What are your recommendations?

I use a combination of air tites and the crown size holders. I hate most the the fancy boxes that they come in. Although I do end up keeping most of the boxes. They just go in a larger card board box in case I ever sell them. Although it doesn't seem that the original packaging adds that much value to them.

I have only been collecting these silver NCLT coins for less than a year and I think the Aussie $5 silver coins are my favorites. They are 36.5g each

Ok so here is my wife complaining that CANADIAN coins do not have BRIDGES like that - yes Aussies have some beauty!!
(note: I worked in Adelaide for a few months back in the 90s).

I encapsulate all my bullion coins in Air-Tites and store them in tubes made to fit the coin and the air-tite. I hardly ever use 2x2s especially for .999 silver, but if I collected NCLT like trout I'd get crown sized pages to store the air-tites in and tape the opening at top shut to prevent the coin falling out of the page/binder. Another more expensive way is to use the paper boxes or leather/velvet boxes that the Air-Tite company makes for the 38/40mm holder, and makes for an impressive display. The largest size can hold up to 18 crowns.

Guess it all depends if you're storing bullion in bulk, or collecting one of each. Storing large amounts of bullion, coin tubes are great for saving space. Beautiful proofs like the ones above definitely belong in albums...

More coins from the same album. I only collect 1 of each and to me they are not bullion to me but collectible coins albeit NCLT issue but none the less tasteful coins

If you are going to store bullion coins that just have bullion value, there is no need to worry how they are stored, even loose, if that is your thing. Putting them in 2x2's as shown is the next step up. If you like to keep them unmarked, screw capsules are the way to go, but the storage of the capsuled coins is less convenient.
For most of my coins I have opted for the methods pictured, because this gives me the best option for access and preservation.
Silver and bronze coins in Mylar 2x2's, stored in clear PVC pages CAN and WILL darken over a period of years by this method, Archival quality pages MUST be used to store Mylar 2x2's, if you are serious about storing your collection in the long term.

This is how the Joey (baby kangaroo) feeds, the mothers nipples are located inside the mothers pouch.

I like to keep my Maples in Air-Tites. Are there any coin album sheets that can accommodate the width of the capsules? So far I'm just stacking them but it's no fun because I can't see my collection.

It IS possible to accommodate air tights in an album. Just buy album pages with 2 1/2 x 2 1/2 pockets. Your friendly dealer may have to order them in, but they ARE available.
