I was wanting to know how to go about canceling the monthly subscription type thing they put you in. When you order something from them do you wait until you receive your order or what? Also, do you have to cancel with each order?

I haven't ordered yet. I wanted to know how you go about doing it before I order, so that I can do it as soon as possible to keep from any extra charges.

You won't be able to cancel until you receive your first "Coins on Approval". When you get your first order they will pay the return shipping.
Upon returning the "Coin on Approval" write on the paperwork that you would like to be removed from the "Coins on Approval" service. Also, send them an email asking to be removed. And you could always take ArrowsAndRays advice and give them a call too. I think I did all 3 and never had to pay a cent in shipping costs. I have placed numerous orders for coins at face value (the only ones I buy from them) and have yet to pay shipping.
This was done after responding to their coins at face ads.

Does it charge you card for the first Coins on Approval? I do plan on returning it as soon as I get it, but I mean does it charge you when they ship it?

Don't give them your credit card #! Pay by check for the bait coins. When the approvals arrive, send them back with a note to cancel approvals and mention any future approval deliveries will be treated as gifts, as per USPS regulations! That should stop 'em!

Could some other numismatic firm that you have purchased from in the past be selling their customer list to Littleton? I've always heard that selling lists of potential customers (aka sales leads) is big in the mail order business.

If a company mails you something you didn't order and didn't agree to you aren't required to mail it back.
I ordered a bait offer from them once, paid by money order, and added a note telling them up front that my order did not imply that I wanted to participate in any future offers or subscriptions and any additional products that were sent to me without my consent would be thrown in the trash and that I did not agree to pay for or return them.
They only sent the $8 $1 coins for $8 that I ordered and nothing else.

I had a "gift" sent from, Littleton at one point now I get the envelopes with 1 or 10 cents in the window. the coins are good for pocket change. the rest does not even get read. I may have won $1,000,000 but I will never know.
