I would like a quick education on proofs if someone doesn't mind.

Are proofs only minted in San Fran? Thus, having the "S" mint mark?

I have found a few in the last couple months. A 2001 Kennedy half dollar and a penny.

Proofs for circulating-design coinage have been minted at San Francisco since 1968. However, Business Strike S-mint cents were concurrently minted from 1968-1974, Business Strike S-mint nickels were concurrently minted from 1968-1970, and Business Strike Susan B Anthony dollars were also concurrently minted 1979-1980 with 1981 S-SBAs issued in Mint Sets. There are also the 1974-1976S Ike dollars but those were only struck on 40% silver planchets and sold individually to collectors with none of them meant for circulation. Since 1982, any circulating-design coin with an S-mintmark is a Proof.

Do not forget those special 2012-S uncirculated ATB Quarters.

No. Both San Francisco and West Point mint proofs.

San Francisco mints proofs of the general coinage and West Point mints proof bullions, ASEs, AGEs, AGBs.

Proofs can be distinguished by not only the mirror finish fields, the mint mark, but also the square rims. Business strikes are only made in Philadelphia and Denver and will have rounded rims.
