My favorite 5 error or variety Cents are as follows:
5- NGC MS-68 1995
DDO (Lots of the '95 DDOs are MS-68s but I wish I had that lone MS-69!)
4- PCGS(?) MS-65 1909-S over horizontal S (sold many years ago. I don't remember if it was PCGS or NGC)
3- A very nice uniface cent double strike.

2- One of the few die cap cents I ever bought.

1- The best error cent I ever found by far.

As you can see I like these last 3 errors so much I use them as my avatar and in the error line-up in my signature.
The 1909-S over horizontal S is my all time favorite variety coin. I wish I still had it or at least had some photos.
As for errors, the "Mushroom" error is my favorite by far. I had it for more than a year before I found that the Lincoln Memorial image on the obverse was not a brockage from the 2nd coin in the strike, but it was the reverse die image showing through the coin because so much metal had been pushed to the outside of the coin and the center and the coin was so thin.

Ram pressure was a bit higher than normal or minimum die clearance unusually small.
I'm so glad that the photo I shot of this error came out so well. I used the photo to study the coin and discovered that the was so thin it became almost "see through" in the center.
I love all errors and on all denominations, but these 5 are my top Cents. I have lots of error cents, but most are common with only a few that are rare.
OcalaFlorida, THANKS for the topic, it's really great to see these wonderful errors and remember the old coins that "got away" over the years.
