Is it possible for a coin to be struck through on both the obverse and the reverse?

Yes, it is! Though I would say it is definitely less common than being struck through on one side.

It's also possible for one coin to have a struck through on the obverse, reverse, and the edge.

of course it's possible, just saw one recently at coin show. I agree that they are less common ones
