Wow, that's nice  The TPGs have been disappointing on the Grading Forum recently, but hard to go low on that one. MS66

I'm gonna go MS65, but I seem to always under-grade large coins.

Well, at least MS65, and the only thing technically that might hold it back is the ever so slightly incomplete strike (in the usual place, the hair above Liberty's ear). If it was "market" graded, then MS66, and that's not all that much of a stretch as PCGS has already certifed over twelve thousand of this particular issue at that level.

It's got to be either a 65 or 66. It is quite a specimen. The 1881-S is my favorite year/mm.

The cheek is very clean. I grade 66.

I will go with MS 65. Even though there is a minimum of bag marks, the cheek isn't good enough for a 66 IMO.

Are you doing a grading set, or just cornering the market on Gem 1881-S's?  I'm happy with it at 66, but suspect the slab says 65.
