So I was looking at some proof sets for sale online and everywhere I searched, the 2012 sets were so much more than the others. What is the cause for such a premium on the 2012's?

The 2012 sets have a much lower mintage than the other proof sets.

It took everyone by surprise when they were taken off sale. One of the few years it paid off to buy directly from the Mint.
Rest in Peace

Does anybody know why they were taken off sale early?

I do not think there was an official answer. The link inside the thread I linked speculates that the mint underestimated the demand and did not produce enough.

Of course that year happens to be the only year I bought a proof set from the mint. Now I'm kicking myself for only buying one!

For years I've always waited until the end of the year before buying everything. I got burned in 2012.
