I ignore Lincoln Shield cents when searching cent rolls. Are there any significant varieties or anything I should be looking for with Lincoln shields? Or are those varieties still undiscovered?

A few doubled dies. I usually ignore the shield cents.

There are known DDR's and some trail dies as well.

The incuse devices are a little bit thinner compared to the other devices. For example, on a DDR, the ONE CENT would be a little bold while E PLURIBUS UNUM would be thin.

They also have die cracks near the left scroll and up into the "O" in "One Cent", and the top of the shield is a common place for die chips.

Also the designers initials "LB" are a good focus point for DDR.

Have not found any myself, but seen some posted here with well defined notching and extra thickness. Thank, Doug.

Probably the best place to look for shield varieties is coppercoins, Wexler's site and Variety Vista. Maybe knowing what to look for will increase your desire for these. Probably 99.5% of these are ho hum, but when you know what to look for often increases interest in these. (this is true for other denominations/designs. Know what to look for is key)
