So since I cant afford a 100mm Lens for my Canon Eos T3 DSLR, I decided to try the cheaper route and get a set of tube extenders. I have 3 lens options now. This is 2 of them.

Taken with Canon 18-55mm lens and a 31mm tube extender.

Next one is with a Canon 55-250mm lens and a 31+21mm tube extenders under same light.

Got-New-Toy!

I like the 2nd pic...but is it good enough quality to find errors or VAMS on Morgans?

Its probably good enough for that purpose. Unless you had tilted the coin or camera when you took those photos, it looks like your set up suffers from a curved field of focus.
If that is a correct assessment then you may well become dissatisfied with the extension tube set up quite quickly. RMPSRMPS recommends strongly cheap enlarger lenses and this would seem to be a very good next step for you. Enlarger lenses have a flat field of focus which is ideal for coins, and they won't break the bank. I have a personal preference for APO enlarger lenses(GOOD ROI) but they will cost between US$200 - US$500 which might be beyond your budget. A non-APO enlarger lens in the range of 80 - 105 mm will probably cost you in the range of US$50-$110.00 and will give you a huge jump in picture quality. YOu would be able to use you extension rings and would just require an M39 -EOS adapter for a cost of under US$25.00

I forgot to level off camera. Too another one this time camera is lever as well as the stand the coin is on.

55-250mm using all three rings. Focus point is the clock tower

Very much better! I got a set of extender tubes to connect my Nikon DSLR to a Nikkor macro (105mm) lens. So far I'm unable to get the focus performance I want. Are you using autofocus on your EOS set-up or manual?
