I'm also a fellow paper money collector, that has now morphed into a coin collector.
First thing you may want to do is, as already suggested get yourself a copy of the Charlton paper money guide.
You might also want to check out cdnpapermoney dot com. It's a great site for canadian paper money collectors.

As for what to collect. That's really up to you and what you like. There's everything from merchant script and charter banknotes all the way to current polymer issues.
If you're looking to start a decent collection but for a reasonable price... the best price is always "face value" right?
So your job seeing a lot of notes is a good start, but most of the notes will have already been well circulated. Another route is to order bills or regularly exchange notes at one or two local banks. Sometimes you get lucky and get a radar or a repeater. If you start using the cdnpapermoney site you'll find out which notes are replacements.
(if you search for replacement notes in this section I think I had listed quite a few ranges and prefixes you can look for as well)
