Hi, I have an Australian 50c and on the reverse it looks as the queens neck has gills or knife slash... I would like to know if this was a mint error or has someone done this after it exited the mint? Am a new coin collector with limited knowledge so far so I have no idea how to check if this is a real error or if someone faked it...

Those "Cuts" are part of the design, Here is the obverse of a Wedding set coin that shows them quite distinctly

P.S wondering also if this could be an error coin or just people defacing the coin:

(It's also 50c coin and has two sets of lines running through the face of her majesty, the queen. Both times one line is prominent and dotted and the other is continuous but hard to see. One set goes through the neck and one goes through the eyes. It is not marked it is actual pitting on the coin.) also it is NOT the gills I mentioned earlier.

Die variety.
Others may judge it's relative scarcity; I don't study this series.

Normally any marks on a coin that are incused are Post Mint Damage or PMD.
If the marks are raised it normally means that it is some sort of error.
It is hard to see what is going on with this coin from your images, try taking an image directly above the coin and not side on, This makes is so much easier to see the coins details

From what you have described it looks like this one is PMD.
