There are two things I can't figure out how to do on this forum, and it's either me, or they just aren't available features.

1) - How do you quote a post? I've been copying and then pasting the quote I want inside the html quote brackets, but it doesn't do much for who said it, or where they said it. Am I just not finding a 'quote' button?

2) - Last post read on a thread. In other forums, when I click on a thread title, it takes me to the first unread post. Is there a way in my settings to make that happen here?

If you are using the Reply to Topic link...
1. Paste the text you want to quote

2. Highlight it

3. Then press the 'Insert Quote' button: Two-Questions-On-The-Basics

That's last post, as in the very last post in the thread.

The OP is looking for first unread post, which is not, I believe, a functionality available on CCF.

J1m, exactly what OP said. Beefer, how I tell last post, and last unread post is by my email inbox...lists most recent posting top of list(only if you "subscribe to topic"). That way, if I want to go to last post, or last unread I can choose there. There is no CCF function to do so. Shouldn't matter anyway, just read up thread a few.

The only "unanswered" feature is the button at top of page, this access list of all unanswered topics recently posted

Correct.

However, the read and unread posts are indicated by the icons at the far left of the post/reply title.

I personally would like to see a "Last Page" link where "Previous Page" and "Next Page" appear.

If you want to make it perfectly clear who said it, just type the ID in.
