A proof has a mirror-like surface. If you set a proof coin on edge on a paper with writing on it, you can read the text in the reflection easily quite a way back into the image.
In fairness, the latest plated Canadian nickels have pretty reflective surfaces that would have been considered at least proof-like by 50-60s standards.
