I have an 1861 Confederate States of America cent and after doing some research I've found that Bashlow strikes say "One Cent" on the rear of the coin. Mine however, does not. Can anyone please help me to figure out what I have here?

Travis, I'm thinking you might have a fantasy imitation of the CSA cent. Not really mu area of expertise, but I'm sure others will weigh in too.

It sounds like you have already done some research on the Bashlow restrikes, but here is an interesting prior CCF thread with some info:

I remember seeing these for sale in Coin World in the early to mid 70's. They were given away to new customers. The only reason I remember is because I considered doing so.

But ill be darned if I can remember the advertiser.
