Saw this peculiar ridge going through the "In God We Trust" lettering on this penny. Any ideas if it was made during printing or after or if this is a somewhat normal thing that I've just never noticed before?

That is a form of Die Deterioration. Metal flows outwards within the dies with much use, this Proto-rim is just one of the indicators of a later die state, prior to it's retirement or self-destruction.
