First thing is to make sure you are taking your images with the light hitting the top of the devices - not the bottom. The eye expects to see the top of relief lit, just the natural way of lighting.
Second thing is to check the white balance and make sure you have it set properly. They way to tell is whether the coin has the colors of the photo. If so, you're fine.
Third thing - use very little light and a lot of diffusion. You want the light to be as soft as possible. Taking images of proof oins is like trying to photograph chrome. Best done on a very cloudy day...make your cloudy day using diffusion. That can be wax paper, tissue paper, or anything that deadens the sharpness of the light.
