Got an American Samoa National Park quarter in my change recently.

The entire coin lacks the silver color, instead it has an overall grey color/tone to it.

Very similar to the ones pictured below that I got off the net.

Thoughts?

Just toning or Environmental Damage.
Quit common on coins, especially ones that have been in circulation.

Environmental tarnishing/toning/discolouration. Not a mint error, just post mint damage from an unknown source.

While also possible the darker shade is due to the mint's improper annealing of the metal, the far more likely causes are those described by JimmyD and merclover.

If it was environmental, wouldn't it be not uniform on both sides?

Like wouldn't it be inconsistent in color, some silver still visible here and there?

It looks as if it was pressed out of a grey metal.

I would think that if it was just sitting on/in the ground for one year that it wouldn't be changed like that.

Is it even possible to "dye" or whatever a coin to look like this?

Just trying to learn.

Metal surfaces react in a wide range of ways when exposed to environmental agents. For example, a clad coin at the bottom of a car's cup holder can be stained/discolored on one side, and look quite different on the other. I've looked at untold numbers of silver and clad coins over the decades, and have seen all kinds of interesting discoloration--and not all of it uniform.

Please post a couple of large and sharp photos of the coin's reeded edges, as well as the full obverse. Thanks.
