This appears to be a mint defect in the date. Maybe die chips?

Correct. Just die chips. On the 1950's wheat cents they continued to use the dies past normal retirement. So a lot of strange things are seen on these wheat cents. (They squeezed every cent out of those dies) So they are a common find during those years.

Very common on mid-'50s wheats, but yours is scarcer with multiple chips.
