Would this nickel be considered copper coated? If so, what would the correct coin terminology be? If not, what makes this nickel a reddish brown color?

Not copper coated, Environmental damage can turn it brown.

If it were copper, you would not see the gray color on the coin. Also if it were on a cent, then the planchet would be the weight of a cent and be smaller in size and the devices would fall over the edge of the coin:
