I have found out that the 1997-2000 specimen sets contain an actual 2.5g bronze cent.

In 2001, the specimen sets contain a copper plated steel cent and thereafter appear not to be bronze.

From 2001-2012 was there a bronze cent produced and which sets would have contained it? The silver proof sets?

A Proof Bronze 1 cent was included into double dollar sets for the following years:
1996 and earlier, 1997-2003, 2006, 2009.
In addition to 1997-2000 specimen sets, the bronze cent was also included into 1997 Uncirculated/PL sets.

I have been doing some investigation. It appears the deep cameo proof cent from the silver proof sets is bronze/copper all the way from 1997 to 2012. I have been looking at the COA cards from those silver sets listed on ebay.

U are right on the 1997 unc set and the 1997-2000 specimen sets, mice45. The Unc/PL sets appear to be copper plated zinc or steel 1998-2012. The specimen sets are copper plated steel 2001-2012.

Composition of Bronze cents is Cu:98.0%, Sn:0.5%, Zn:1.5% Weight 2.50 g Diameter 19.10 mm
2004,2005,2007-2012 Proof copper cents are Cu: 99.99%. Same weight and diameter as bronze cents.
Note that 2003 1 cent Coronation (1953-2003) and 2010 1 cent 75th ann of Voyageur (1935-2010) are also pure copper.
