My favorite is 55-S since it has a manageable number of full BIEs, plus a larger but still manageable number of associated BIEs. Huge quantity of BU rolls were saved due to it being the last year of the old SF mint, and many of them have not been searched. And 55-S also has a manageable number of RPMs and doubled dies such that a complete collection of known 55-S die varieties and die errors is actually possible.
My other favorite year for searching is 54-S. Like 55-S, mintage was low, but many rolls are available, though not nearly as many as 55-S. There are many more 54-S varieties than 55-S.
It is rare that I look through a 55-S or 54-S roll and don't find some varieties.
56-D is a good year but most 56-D rolls have been searched. There are many 57-D and 58-D rolls available, with many RPMs, BIEs, and Doubled Dies listed, but for some reason I have very poor luck with them.
Specialists also try to find the early BIEs from the 40's, and the later ones from the 80's and 90's. Jean Cohen's book on Lincoln Cents was published in 1969, so 70's/80's/90's errors and varieties are less known and can end up as discovery pieces when found.
