So my question is how to really tell the difference. Let's say on dimes and nickels, do both sides have to show signs of an annealing problem? I thought the annealing problem had to be on both sides and the colors can range from black to brown. Also, I thought the silver color couldn't be on the high spots where it was worn. Are they usually of bad quality, because I found a 2021 dime that looked like a dark silver color but was in really good shape.

Here is an example of what I was trying to explain

There are a lot of factors that change the coloring of coins. Metal is subject to chemical changes depending on what it comes in contact with. For example, metal detectorists find different colored coin depending on the soil type they are found in.

Annealing is a change in metal through heat being applied. Therefore annealing is throughout the entire matrix of the metal. So you are correct the high points being worn are not going to lose color and become silver.

Annealing errors on coin generally give a slight bluish coloring when the luster of the coin is seen in direct light.

There is no way to know what condition an annealing error coin will be I when found, but like all other coins they start out sharp with luster (dark) abnd wear as used.

You might want to go to HA.com and start looking at annealing error coins to get a better idea of what they look like. Check sold error coin auctions.
