My guess:
1) 1901: AU-53
2) 1901-S: MS-60
3) 1907: AU-58.

I wouldn't spend the money to have them graded since I don't think they could grade high enough to boost the value over raw coins. Of course, if you wanted to sell them on ebay having them in PCGS slabs should encourage more bidding.
Rest in Peace

The refelctivity on the devices and inner portion of the fields of the 1901-s make it look like it might have been lightly polished at some point, especially since the detail level appears full, but luster is somewhat lacking. Could just be the photos though. Other than that, I agree with Jaobler.

Does anyone think the second coin looks like it has PVC damage? Am I the only one seeing green?

I see what you are talking about shadow, but I attributed the greenish glow to a reflection/glare since I believe the coin has been polished.

remember gold coins are 90% gold and 10% copper (thus the green patina)

#1 AU-55 due to lack of many distracting marks
#2 MS Details if original MS-60/MS-61
#3 AU-53 quite a few marks/ some luster.
