I actually like the second picture better because I don't like anything taken through plastic, it can either hide flaws or make it appear to have flaws that the coin doesn't have

You got that right.
I'd use the first style if I were presenting them for sale. Buyers are going to like the black/white contrast better. It tends to be "expected" for Proofs, and if you can accurately depict a BU coin with the same contrast, it will really grab the eye.
