I'm checking through thousands of coins for errors, RPMs, etc. Currently, I'm going through thousands of Roosevelt dimes (non-silver).

Several are off-center & have a noticeably much wider rim on one side, e.g., the west side of the obverse, & a much thinner rim on the facing side, e.g., the east side of the obverse. Is this considered an error with any monetary value?

Also, some are Struck Through Grease, like the certified Starburst errors on the new Presidential dollar coins. Is this considered an error with any monetary value?

The rim issues with your dimes are due to misaligned dies. Generally one side is affected and the other side is not. They are not considered to be off-center and do not have a premium.

Grease strike-thoughs do not usually have a premium unless it is dramatic- i.e. most of the detail of one side of a coin is missing while the other side is MS.

Quite possibly the starburst effect you are seeing is common die wear. No premium value.
