I'm curious:

There are so many error coin types,
but which coin error type & which denomination is the rarest & most sought after in the world today?

Die Caps
Wrong Planchet
Off-Centers
Broadstrikes
Partial Collars
Uniface Strikes
Brockages
Double & Triple Struck
Indents
Die Adjustment
Bonded Coins
Double Denominations
Coins Struck on Feeder Finger Tips
Struck Fragments
Mated Pairs
Proof Errors
Gold Errors
Transitional Errors
Counterbrockages
Martha Washington Test Pieces
Fold-Over Strikes
Missing Edge Lettering

...did I miss any error types?

Interesting question, personally I would have to say Proof errors, and the newer the more rare. reason being the Proofs need to be scrutinized to a higher degree, and the QC in the more recent years is way higher than it was 20 or so years ago.

But I am sure there will be a lot of differing opinions.

I think we all agree that the Bigger the error the more rare it is thought

With out doing any research, my guesses would be

Mules - Washington quarter obverse on Sac dollar comes to mind.

Wrong planchets - seems like I have heard of gold $2.50 planchets
with Indian Head cent. I have seen dime planchets
cents.
And

Multiple strikes

I think spelling mistakes do stand out from time to time. Chile 2008 50 peso is one of the best example that I can think of. Another one is wrong design such as Italy 1997 100 lira which had incorrect map.

Something to consider is "packaging error" where the wrong year of certain coin or wrong denomination was placed in the mint set. Granted, it's not necessary a coin error but it's an mint error product.

I'm not certain if I would consider double denomination as a genuine error as it's most likely created by mint sports - i.e. intentionally overstruck to save on using fresh planchets or was struck just for the sake of fun.

Of course. If you look in the Red Book there is a listing of many of the common errors. In a book by C.D. Doughtrey about Lincoln Cents, there is a pile of all sorts of different errors on just Cents. And I see you missed those lousy rotated reverses too. So many people miss those or just ignor them. As to which ones are the most expensive, or rarest, difficult to say since that so much depends on who pays what for what. It sort of depends on how rich you are and what your willing to pay for something.

You also have to consider that rarest type and most sought type after may not be the same thing.
