The image quality is not real sharp so I'll say AU55. This could easily be a low MS piece with a touch of strike weakness.

AU-55. I'm seeing top knot rub and disturbed fields.

Thanks. It clearly appears circulated in the new images. 53 or 55 sounds about right. A nice example of this slightly better Civil War date.

Well, I think I should finally
take a chance on a raw coin.
I can get the 1861 $5 raw for $330.
Melt is $314.55.
I figure I'll come out OK
as long as it's Genuine.

It appears to be in a TPG holder? $330 is very cheap too. $330 is about 50% of the retail value of this piece in AU55. This AU55 sold for $720 this month on Heritage: https://coins.ha.com/itm/a/1259-8080.s

I'd buy it for $330 in a heartbeat. Better date, Civil War date and in decent condition. Worst case it's a $400 piece in AU Details and it looks better than that.

Would it be worth another $30
to have it sent off to PCGS for certification?

If the gouge in the cheek is an old one then I'd go for it. If you can see fresh metal anywhere in that gouge then keep it raw.

Why?
What difference would that make?
