The wheat stalk seems to be minted into the damage so I'm curious if this could have happened at the mint. Conversation piece but not $500 worth.

More likely that's the remaining impression of the wheat stalk left behind when the rest of the coin got sheared off. Not even a complete hole filler....

Ugh! I hate seeing beautiful old coins ruined to such a degree. I'd love to get my hands on an 1909 S but not for that kinda money especially in that condition.

I'd rather hunt for one and get lucky to procure one and I'd hope to god it's in at least EF40 condition.
