1879-S is very affordable in PL/DMPL and would do nicely, easily found with a razor sharp strike. If you want an (expensive) challenge, try finding a MS64 or MS65 1879-S with the very scarce "Reverse of 1878" / parallel arrow feathers!!
1883-O, 1884-O, 1904-O (and 1899-O, 1901-O, 1902-O in PL to an extent) are also widely available in PL/DMPL. With O-mints you have no shortage of interesting and collectible VAMs, notably the O/O varieties for 1883 and 1884 and the 1899 Micro O MM VAMs.
For CC I would recommend 1883 or 1884, GSA Prooflike (PL) and DMPL examples are readily available on the market without excessive premiums. Go for one in an NGC holder.
By far, the most common 1890's Philly mint issue in high grades is the 1896, and it also happens that 2 Top 100 VAMs (Doubled Stars
VAM 4 / "8" In Denticles
VAM 19) are found on the Philly issues of 1896. PL coins can be found up to about MS64 for that year and MM, but DMPL coins are quite a bit scarcer and correspondingly more expensive.
If you have a deep enough pocketbook and want to spice it up you could look for a Redfield Hoard coin, many of which have beautiful toning in their original Paramount holders. First-generation
ANA (ANACS) white slabs are also known for beautiful steel-blue and reddish edge toning.
